My grandmother made the best tzatziki EVER. She used to strain the yogurt overnight inside a dishtowel hanging over the sink. It was so thick, you could scoop it up, turn it upside down, and it wouldn't move. Oh yeah, it was THAT good.
This creamy, garlicky, little bucket of love makes me do a happy dance. What is not to like? In the words of Joey Tribbiani:
Yogurt good
Cucumber good
Garlic gooooood
This is a wonderful sauce that you can serve on side of meats, french fries, veggies, or just sop up with a piece of pita.
Ingredients
1 tub (35.3 oz) Fage Greek 0% plain yogurt
1 small seedless cucumber, minced*
1 garlic clove, minced
1 tablespoon dill
2 tablespoons olive oil
Salt
Pepper
*Take the time to mince it, the crunch is great. You can grate it but it releases a lot of water into the yogurt, make sure you squeeze as much water out as you can.
Directions
1. Stir to combine all ingredients in a bowl,
2. Refrigerate until needed
