I was planning a dinner party and was scrambling to find a light appetizer to serve. My cousin suggested this and WOW, what a crowd pleaser! I played around a little with the basic ingredients to find what worked best for me. I love this dish because it is...

Ingredients
1 cup tomatoes, diced (add a pinch of sugar if needed to sweeten)
10 basil leaves, chopped (about 2 tablespoons)
3 garlic cloves, minced
1/4 teaspoon white balsamic vinegar (can sub regular)
1 teaspoon extra virgin olive oil
Sea salt
Fresh cracked pepper
Directions
1. Dice tomatoes, check for sweetness; Add a pinch of sugar if needed
2. Combine all ingredients evenly
3. Refrigerate for a few hours (you can serve immediately, refrigerating it yields a bolder flavor)
To Serve
You can also add some of your favorite shaved parmesan or pecorino on top! Here are a few of my favorites ways to serve bruschetta:
-Mini-toasts or wheat rusks (Greek "friganes")
-Crusty toasted baguette
-Chicken/veal/eggplant cutlets
