There is something magical about Italian food, it has the tendency to tell a story and create a memory. I created this dish for my grandmother as a beautiful alternative to tomato sauce. I have a variety of very fragrant herbs growing in my garden that I wanted to utilize. We loved this dish because it is...
Fragrant
Light
Quick
Easy
Ingredients
1 Package ravioli (can substitute any pasta such as cavatelli, gnocchi, etc.)
3 Tablespoons butter alternative (like smart balance)
2-3 Fresh sprigs of rosemary
Fresh grated cheese (I like pecorino romano)
Fresh ground pepper
Pinch of salt
Directions
1. Cook pasta to package instructions, strain, and set aside in a serving dish
2. In a cold frying pan on medium heat, add "butter", rosemary, pepper, and a pinch of salt. Stir until melted together and fragrant (1-2 minutes, do not burn!)
3. Pour sauce over ravioli and top with grated cheese, serve immediately!
Suggestions/Notes
-Easily made vegan by substituting cheese ravioli with a plant-based mushroom or vegetable ravioli
-Can add truffle oil, just make sure it is high quality or fresh shaved
