Crepes Batter
Ingredients
2 eggs
1/2 cup of milk
1/2 cup of water
3/4 cup all purpose flour
2 tablespoons of sugar
1 teaspoon melted butter
1 teaspoon pure vanilla extract
1 oz cognac/Metaxa (optional)
Disposable glove...not for the food but,easier than using a spatula
Directions
1. Preheat a non-stick pan (or a greased regular pan) over medium heat
2. Whisk all ingredients in a bowl until smooth, batter will be very loose and closer to a liquid than a batter
3. Use a ladle and pour directly into center of hot pan, swirl the pan around to cover the whole bottom area of the pan. The batter will start too solidify in color, that is when it is ready to be flipped.
4.Using your hand with the latex glove, quickly lift the edge to pull it up and flip it over. Your crepe should have some brown spots not evenly brown
5. Remove from heat, add fillings to center, roll, serve immediately
Note: You can make this in advance and keep it in the fridge 2-3 days before
To serve
These are best served right out of pan, you can also make a few and then serve them on a platter.
