Ingredients
2 bags frozen string beans
2-3 large sweet potatoes, peeled and cut into 2 inch cubes (about 6 cubes per potato)
1 large white onion, finely chopped
1 13 oz can tomato sauce (I like Red Pack)
1/3 cup extra virgin olive oil
2 bay leaves
Salt
Pepper
Directions
1. In a large pot over medium-high heat, heat the olive oil and sauté the onions until they become translucent
2. Add bay leaves, salt, and pepper and stir for 1 minute
3. Add potatoes, string beans, and sauce, turn to coat evenly
4. Bring to a boil, lower heat to medium-low and slightly cover with a lid, simmer for 40 minutes, stirring occasionally. Allow 15 minutes to cool before serving.
To Serve/Notes
- This is absolutely wonderful with sweet potatoes, you can absolutely substitute with a regular potatoes but why would you? This way is healthier and delicious
- Crumbled some cold feta on top to give it an extra boost of flavor
-You can add some diced veggies such as zucchini
