Ingredients
1 15.5oz small can of chickpeas, rinsed
1 cup of rice, rinsed
1 small onion, chopped
1/4 cup extra virgin olive oil
1 cup (8 oz) crushed tomatoes (can sub tomato sauce)
1 cup water
Salt
Pepper
Directions
1. In a medium saucepan over medium-high heat, heat the olive oil and sauté the onions, chickpeas, and rice with salt and pepper for about 5-7 minutes (until the onions become translucent), add additional salt and pepper if necessary
2. Stir in tomato sauce and combine evenly, add water, stir occasionally, bring to a boil, reduce heat to medium-low, cover with a lid, cook for 15 minutes (stir occasionally)
3. Extinguish heat and let rest covered with the lid for 10 minutes before serving
To Serve/Notes
-Can serve with crumbled feta on top (absolutely delicious, a must try!!)
-You can add 1/2 a cup of veggies to step #1 with the onions, I like julienned green bell peppers and/or chopped frozen spinach, even small small cubes of chicken!
